Puto Maya with Nangka

Ingredients:

  • 2 cups regular rice
  • 1 cup malagkit rice
  • 2 ½ cups water
  • 3 tbsp coconut powder
  • 1 can Alaska condensada
  • ¼ cup chopped fresh nangka
  • grated coconut
  • 1 cup sugar
  • 1/3 cup toasted sesame seeds, pounded
Procedure:
Cook rice in water like the usual "sinaing". When almost dry, blend in Alaska condensada, and nangka and cook over low heat until rice is totally cooked and almost dry. Let cool and form into balls. Roll in grated coconut and serve with sesame-sugar.


To make the sesame-sugar, blend pounded sesame seeds and sugar.

Pork and Veggie Sautè

Ingredients:

  • 3 cloves garlic, crushed
  • 1 pc small onion, sliced
  • 1/4 kg pork pigue, cut into chunks
  • 1 pc pork bouillon cube
  • 1 pouch Del Monte Filipino Style Tomato Sauce
  • 150 g carrot, sliced
  • 1/4 kg cabbage, sliced
Procedures:
  1. Sautè garlic, onion, pork and bouillon cube. Add Del Monte tomato sauce, 1/2 tsp iodized salt (0r 1/2 tbsp iodized rock salt) and 1 cup water. Simmer for 10 minutes.
  2. Add carrot and simmer for 5 minutes. Add cabbage then simmer for 3 minutes.

Pork Chinese Adobo

Preparation Time: 00:15

Ingredients:

  • 2 tbsps. cooking oil
  • 1 tbsp. crushed garlic
  • 2 tbsps. sliced ginger
  • 1/4 cup sliced onion
  • 1/2 kg. pork liempo cut 2" thick
  • 1/2 cup vinegar
  • 1/4 cup MAGGI Savor Adobo
  • 1/2 tsp. salt
  • 1/4 tsp. freshly cracked peppercorn
  • 1 tbsp. sugar
  • 2 pieces star anise
  • 1 cup water
Procedure:
  1. Heat oil, saute garlic, ginger and onion until limp. Stir in pork and cook let fry for 5 minutes or until pork changes in color.
  2. Pour in vinegar and bring to boil before stirring.
  3. Season with the next four ingredients, simmer for 10 minutes.
  4. Add star anise and water, continue simmering for another 10 minutes or until pork is tender and sauce has reduced and turned light brown in color.

Pinakbet Recipe


Ingredients:

  • 2 tbsps. cooking oil
  • 1 tbsp garlic, finely chopped
  • 1/2 cup onion, finely chopped
  • 750 gms pork, diced
  • 5 pcs. ginger
  • 4 pcs. ripe tomatoes, cubed
  • 1/2 cup shrimp paste (bagoong alamang)
  • 1/2 cup water
  • 3 pcs. eggplants, sliced
  • 2 cups squash, sliced
  • 300 gms. okra
  • 300 gms. sitaw
  • salt & pepper to taste

Procedure:
  1. Heat the oil in a saucepan and sauté the garlic and onion.
  2. Add the pork. Stir and cook for 15 minutes.
  3. Add the ginger and tomatoes and cook for 10 minutes.
  4. Add the shrimp paste and stir for 3 minutes.
  5. Add the water and bring to a boil.
  6. Add the eggplant, squash, okra and sitaw.
  7. Simmer for 15 minutes.
  8. Season with salt and pepper if desired.

How to make Calamares

Ingredients:

  • 2 1/4 lbs medium sized squid
  • 2 pieces eggs
  • 1 cup plain flour (all-purpose)
  • 1 cup oil
  • 30 ml fresh lime juice (calamansi juice)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • mayonnaise, for dip
Procedure:
  1. Clean the squid, remove the head, ink sacs and tentacles discarded, outer purple skin peeled off and do not cut squid open.
  2. Slice squid into 1/2 inch rings. Marinate in lime juice for about 25 minutes.
  3. Beat eggs.
  4. Dip squid rings in eggs, then dredge in flour.
  5. Heat oil in a wok and fry squid rings in hot oil a few pieces at a time until they turn golden yellow, about 1 minute. Do not overcook.
  6. Remove squid rings from the wok and drain on paper towels. Season with salt and pepper.
  7. Serve with mayonnaise.

Sinigang na Baboy

Ingredients:

  • 3/4 kilo pork, cut into chunks

  • 3 tomatoes, sliced

  • 2 onions, diced

  • 5 cloves of garlic, minced

  • 100 grams kangkong (river spinach)

  • 100 grams string beans

  • 2 pieces horseradish, sliced

  • 3 pieces gabi (taro), pealed

  • 2 pieces sili (green finger pepper)

  • 200 grams sampalok (tamarind)

  • 3 tablespoons of patis (fish sauce)

  • 1 liter of rice wash or water

Procedure:
  • Boil sampalok in water until the shell shows cracks. Let cool then peel off the shells and with a strainer, pour sampalok (including water) into a bowl. Gently massage the sampalok meat off the seeds, strain again.
  • In a pot, sauté garlic and onion then add the tomatoes. Let simmer for 5 minutes.
  • Add pork and fish sauce then add the rice wash. Bring to a boil then simmer for 15 minutes then add the gabi. Continue to simmer for another 15 minutes or until the pork is tender.
  • Add the horseradish and simmer for 10 minutes then add the string beans, kangkong and sili. Let boil for 2 minutes.
  • Serve hot.

You can substitute the sampalok with any commercial seasoning mix like Knorr sampalok seasoning or tamarind bouillon cubes for this recipe.

How to make icing flowers

For decorating debut and wedding cakes, nothing can beat icing in the form of flowers. And during kiddie parties, who hasn't seen boys and girls quarreling over the four pieces of icing flower from the party cake? To get started on this project, you need a mixing bowl that can be either plastic or stainless, a flour sifter, a measuring cup, and a pair of scissors. You will also need the other materials listed below, all of which can be bought for around P1,200 from Divisoria in Manila or from the supermarket nearest your place: (prices may not reflect real market conditions)

  • 12" pastry bag (P140), with tips 3, 36, 67, 103 or 104 (P35 each tip)
  • Medium size rubber scraper (P230)
  • No. 7 flower nail (P50/pc)
  • Portable mixer (P500)
  • Code P-100 plastic ware for packaging (P6.50/pc)
  • 12" floral wire (P26/pack of 100 sticks), or magnetic wire #27 (P492/0.5 kg)
  • Toothpicks (P9.50 per pack)
  • Bond paper (P10/20-sheet pack), or wax paper (P500/5-kg roll)
  • 454 g powdered sugar, sifted (P28/box)
  • 1 tsp calamansi extract (P0.50)
  • 2 pcs egg white (P4/pc)
  • 4 colors gel-paste food color (P62/1 oz bottle of primary colors and P75/1 (oz special color)

PROCEDURES

STEP 1.
First, separate the egg white from the yolk by cracking it into halves and letting the yolk stay in one shell while the white drips. Set aside the egg white and extract the juice from the calamansi. Then get the sifted powdered sugar, make a well at the center and pour the egg white and calamansi dew onto it. Circularly blend the three ingredients together using a portable mixer that is set to speed no. The egg white will serve to bond all the three ingredients together, while the calamansi dew will serve as a stabilizer that can hasten the texture of your icing.

STEP 2.
When the powdered sugar dissolves, turn the mixer to speed no. 2. Continuously mix until it smoothens. You'll notice that as the mixture smoothens, its shine begins to disappear because the egg white is getting mixed well with the powder. Once the three ingredients are well blended, the mix becomes creamy. Your icing is ready if sharp and pointed edges develop as you mix. Once you notice those pointed edges, you can now put color to your icing. To do that, get a half-cup of icing using a rubber scraper and put it in a bowl. Cover the remaining icing with a damp cloth and set it aside. Then, apply your desired color to the half-cup of icing by dipping a toothpick in the color container and spread the color. Three dips are usually enough for this amount of icing, but you can reduce or add more color based on your preference.

STEP 3.
Mix until the color is evenly distributed throughout the icing. Make sure there's no dull or pale portion left. After that, get the pastry bag, cut its tip using scissors, and insert the tip 67 for leaf making. Then, transfer the colored icing to the pastry bag. You can now color the remaining icing and put them in bowls that are covered with damp cloth. Lay down a clean sheet of bond or wax paper on the table. To make a leaf, position your tip 67 at a 45-degree angle; the tip should lightly touch the surface of the paper and the wide opening of the tip should lie parallel to the paper. Squeeze out hard the icing to build a base and lift the tip slightly. Continuously squeeze while pulling steadily. Once you achieve the length you want, stop squeezing the pastry bag and lift away from the surface. You'll notice that the tip of the leaf is created as you pull the bag towards you. Do this repeatedly until you have emptied your pastry bag.

STEP 4
. Now you can start making full-bloom flowers, like roses. Make flower buds first for your roses by using tip 36 for the shell design or tip 3 for the plain design. Insert a half-inch of the floral wire inside the tip. Squeeze out the icing while you are slowly pulling out the wire. Before doing that, however, make sure that you have arched the tip of your floral wire so it can serve as anchor for your flower. Stop squeezing once you have completely pulled out the wire. Place your flower bud in a Styrofoam to let it dry for an hour. While waiting for the buds to dry, prepare the icing for the petals. You may use pink or purple colored icing, and tip 103 or 104 for making petals. When the buds are set, get one and start putting the first layer of petals. Hold the bud on your left hand, and the bag on the other hand. Position your tip 103 parallel to the lower part of the bud, with the wide opening of the tip touching the cone of the bud.

STEP 5.
Make sure that the narrow opening points up and slightly inward. Now squeeze out the icing as you slowly rotate the bud counterclockwise, then move the tip up and down to cover the peak of the flower bud with another layer of icing. Don't loop the tip to the bud; just move it slowly up and down to create a swirling effect. Let it dry again for about an hour. Do this to other buds. For the wild rose, however, you can directly make its petals as soon as the buds have hardened. Just hold the bud with your left hand again and the bag with your right hand. Position your tip 103 or 104 at a 45-degree angle to the bud. The wide opening of the tip should slightly touch the bud.



STEP 6.
Then squeeze out the icing and hold as you slowly turn the bud clockwise, such that the icing is stretched. Then move the tip closer to the bud before lifting it away; this way, you can stick the end of the petal to the bud. Do it five times to complete the flower. To replicate your wild rose, just do the same procedure.

After an hour, you can go back to your rose base. To add petals, do the same procedure just like when you were doing the wild rose. The only difference is that you'll do three petals for the first layer and they will be in a closer position. Then you'll add another layer of petals-four in all-after one hour or when the first layer have dried. And for the last layer of petals, you'll need to do five that are in full-bloom position.

Keep your icing flowers in dry and airtight containers. After drying for 24 hours, you can bunch the leaves together with the flowers or put them in your cakes.


STORAGE
Icing flowers last long when they are kept dry. Rosario Tan, sales manager of Penco Powdered Sugar, suggests that you improvise a light box that can serve as a dryer and storage facility. Just make a box using plywood, providing it with a door and incandescent light bulbs at the opposite side. Put layers of chicken wire where you could hang your icing flowers. The incandescent bulb provides heat when it is turned on, so you can be sure that your icings are keep dry and moisture-free.

Because icing flowers are brittle, it is recommended that you use a square or cylindrical plastic jar with a screw-type cap. A P-100 square plastic jar can contain about 100 icing flowers, which is ideal if you're going to supply icing candies to grocery stores, school canteens, or
sari-sari stores. Your yield for this recipe is around 500 pieces of icing flowers. If you're doing only drop flowers or leaves, your yield would be much higher.

How to make puto kutsinta

Puto kutsinta is a Filipino delicacy that is brown in color, sticky and glutinous. It is made of rice flour and served with grated coconut. It is one of my favorite snacks :)

Materials needed:

  • Mixing bowl
  • Measuring cups and spoons
  • Wooden spoon
  • Muffin pans or small, shallow bowls
  • 2 cups cassava flour
  • 2 cups all purpose flour
  • 4 tsp. lihia or lye water, P22.50 for 250 grams (available in supermarkets)
  • 2 cups pandan juice
  • 8 tsp. butter
  • 2 cups brown sugar
  • Freshly grated coconut as topping
Getting started:
  1. Mix the butter and sugar.
  2. Sift the all-purpose flour and cassava flour.
  3. Combine this with the mixed butter and sugar.
  4. Pour the pandan juice and lihia (lye water) and mix again until it the texture is smooth.
  5. Pour into a muffin pan or shallow bowls, making sure to leave room at the top.
  6. Steam for 20 minutes.
  7. You may sell this with grated coconut on the side.

Chicken Inasal

Ingredients:

¼ cup chopped ginger
2 tbsp chopped garlic
¼ cup brown sugar
¼ cup calamansi juice
1 tsp rock salt
½ cup coconut vinegar
2 sachets 8g Maggi Magic Sarap
1 kg chicken, cut into serving pieces
¼ cup cooking oil
2 tbsp. atchuete

Bagoong-Calamansi Dip:

2 tbsp sinamak or bagoong isda
2 tbsp Maggi Savor Calamansi
5 pieces siling labuyo, sliced
¼ cup calamansi juice

Procedure:

  1. In a bowl combine ginger, garlic, sugar, calamansi juice, salt and Maggi Magic Sarap. In another bowl, marinate chicken in the prepared mixture for at least 1 hour. Set aside.
  2. Prepare the atchuete basting oil by heating the oil in a pan and frying the atchuete until oil turns red. Discard the seeds and set aside the oil.
  3. Grill marinated chicken while occasionally basting with atchuete oil. Serve with the bagoong-calamansi dip on the side.

Leche Flan

Ingredients:

  • 1 can (390g) evaporated milk
  • 1 can (390g) condensed milk
  • 10 egg yolks
  • 1 teaspoon of vanilla extract or lemon essence
For the caramel:
  • 1 cup sugar
  • 3/4 cup water
Procedure:
  1. In a saucepan, mix the sugar & water. Bring to a boil for a few minutes until the sugar caramelize.
  2. Pour the caramelized sugar into aluminum moulds - you can use any shape: oval, round or square. Spread the caramel on the bottom of the moulds.
  3. Mix well the evaporated milk, condensed milk, egg yolks and vanilla by hand or blender.
  4. Gently pour the mixture on top of the caramel on the aluminum moulds. Fill the moulds to about 1 to 1 1/4 inch thick.
  5. Cover moulds individually with aluminum foil.
  6. Steam for about 20 minutes OR bake for about 45 minutes. Before baking the Leche Flan, place the moulds on a larger baking pan half filled with very hot water. Pre-heat oven to about 370 degrees before baking.
  7. Let cool then refrigerate.
  8. To serve: Run a thin knife around the edges of the mould to loosen the Leche Flan. Place a platter on top of the mould and quickly turn upside down to position the golden brown caramel on top.
Cooking Tips:

You can tell when the Leche Flan is cooked by inserting a knife -if it comes out clean, it is cooked.

Spicy Meatballs

Ingredients:

1 lb. lean ground beef
2 eggs
1 (2 1/4 oz.) can deviled ham
1/3 c. fine dry bread crumbs
1/2 tsp. salt
1/2 tsp. dry mustard
Few dashes hot pepper sauce
1 1/2 c. prepared mincemeat
1/2 c. apple juice
1 1/2 tbsp. cider vinegar

Directions:

  1. Preheat oven to 375 degrees.
  2. Lightly mix beef, eggs, deviled ham, bread crumbs, salt, dry mustard and hot pepper sauce. Shape into meatballs about 3/4 inch in diameter.
  3. Arrange on jelly roll pans or other shallow pans.
  4. Bake for about 15 minutes. In a frying pan, heat mincemeat, apple juice and vinegar until bubbly; add meatballs. Bring to a boil again.
  5. Simmer covered, about 10 minutes.
  6. Turn into chafing dish to keep warm or transfer to serving platter.
Yields: 5 dozen. 36 calories each

Rolled Bread

Rolled bread can be stuffed with either sausage, hotdog or ham and of course cheese. Pick your choice. In this recipe, we will be using sausage.

Ingredients:


10 slices of loaf bread

120 g sausage
block of cheese, about 150 g
1 egg - beaten
1/2 c. flour stirred with 1/2 c. of yellow cornmeal
about 2 c. of cooking oil

Procedure:

  1. Cut the crusts off the bread. Lay each slice on a flat board and flatten using a rolling pin.
  2. Cut the sausages and cheese into strips a little shorter than the width of the bread.
  3. Arrange a strip of sausage and cheese at the center. Brush the far edge with the beaten egg, Roll the bread, pressing to seal. Repeat with the rest of the bread, sausage and cheese.
  4. Brush each rolled bread with egg. Brush inside the open edges (the sides) too. Roll in the flour-cornmeal mixture. Sprinkle the open edges with the flour-cornmeal mixture too to seal the cheese inside and prevent it from oozing out when it melts during frying.
  5. Heat the cooking oil until it starts to smoke slightly and fry each rolled bread. Once by one, for best results, turning the bread in the hot oil for even browning. The frying pan should be very, very short. Just long enough to brown the bread but not get it soaked too much in oil. And just long enough to heat the sausage and melt the cheese but not liquefy the cheese totally.
  6. Drain the fried bread on a stack of paper towels. Cut each piece diagonally into two. serve hot. They go well with potato salad.

Sweet and Sour Wings

Ingredients:

2 lb. chicken wings
1/2 c. brown sugar
1/4 c. cider vinegar
2 tbsp. soy sauce
2 tbsp. catsup

Directions:

  1. Cut off and discard wing tips and excess skin. Cut wings in half at joint.
  2. Place in 8x8 inch baking dish. Combine sugar, vinegar, soy sauce and catsup. Pour over wings.
  3. Marinate 3 to 4 hours, or overnight in refrigerator, stirring once or twice to coat.
  4. After marinated, microwave at high 11 to 22 minutes, or until fork tender, checking in several places, pushing center portions to outside of dish after half the cooking time.
  5. Makes approximately 15-20 wings.

Maja Blanca

Ingredients:

1/2 cup cornstarch
1/2 white sugar
2 cups coconut milk
coconut cream from 1 grated coconut

Procedure:

Coconut cream:

  1. Extract coco cream and coconut milk from the grated coconut.
  2. Place grated coconut in a muslin bag wrung out of warm water.
  3. Twist the open end and squeeze out the coco cream without adding water.
  4. Set aside for cooking latik.
Coconut milk:
  1. Add three potions of warm water and squeeze the bag of grated coconut with every addition of water.
  2. Cook coco cream in a frying pan over medium heat until oil and latik form.
  3. The latik should have a delicate, golden yellow color and must not be burnt.
  4. Transfer latik into a cool dish separate from oil or further heating will turn the latik to darker shade.
  5. Blend cornstarch and sugar thoroughly in a 1-quart bowl and add 1/4 cup of coco milk.
  6. Boil the rest of the coco milk in a 2 quart saucepan.
  7. Add the cornstarch-sugar mixture, stirring with a wire whisk until it boils.
  8. Hold for 2 minutes to attain a cooked flavor of the starch.
  9. Pour while hot into two oiled cereal dishes. Cool completely.
  10. Cut into pie wedges. Garnish each piece with latik.
  11. Serve hot or chilled.

Sizzling Tuna Sisig

Ingredients:

1/2 cup Magnolia Gold Butter, salted
2 pc. tofu (2 cups)
1/2 cup white onions, chopped
2 pc. green finger chili, slice each diagonally into 3
2 pc. eggs

Tuna Mixture:

1 cup tuna chunks or solid - drained
1 tbsp calamansi juice
1 tbsp liquid seasoning
1 tbsp sugar
1/2 tsp pepper
1 cup mashed soft tofu

Topping:

1 pc. loaf French bread, sliced diagonally into 16 pieces

Procedure:

  1. Prepare one 12-inch deep round frying pan, melt the butter.
  2. Fry the tofu, cut into 1/4 inch cubes. Drain on paper towel.
  3. Put in a bowl, tuna chunks, calamansi juice, liquid seasoning, sugar, pepper and mashed soft tofu.
  4. Put butter, onions, and finger chili in hot frying pan.
  5. Add tuna mixture and mix for a few seconds
  6. Add cooked firm tofu. Mix well.
  7. Transfer to 2 plates. Top each plate with one egg. Serve bread on the side.

Pork Adobo

Pork adobo/adobong baboy consists of chunks of pork cooked in vinegar, soy sauce, lots of garlic, whole peppercorns and bay leaf.

Ingredients:

1 kilo pork picnic or side bacon belly cut into bite-sized cubes
1 cup white vinegar (you may also use sukang iloko)
1 cup garlic, finely chopped, portioned into two
3 pcs. laurel (bay leaves)
1/2 cup soy sauce
1 cup water
1 tsp peppercorns
3 tbps. oil

Procedure:

  1. In a deep skillet, brown pork in oil.
  2. Add vinegar, soy sauce, first portion of garlic, laurel, peppercorn and water.
  3. Bring to a boil, lower the fire and cook uncovered for 10 minutes.
  4. When it gets too dry just add 1/2 cup of water.
  5. Cover and let simmer until pork becomes tender.
  6. In another pan, cook remaining garlic until golden-brown.
  7. Add pork and pour the rest of the adobo sauce.
  8. Serve hot.

How to make Pastillas

Ingredients

1 1/2 cups powdered milk
1/2 cup condensed milk
1/4 cup melted butter
white sugar (for rolling)

cellophane paper


Procedure

  1. Sift powdered milk into the condensed milk and butter.
  2. Mix and blend well.
  3. Knead and set aside 5 to 10 minutes before shaping into small balls or 1/2" thick logs.
  4. Roll in sugar and wrap in cellophane.

Hotdog And Squid Balls Pastel

Most of my friends love to make surprise visits, and I always end up buying cooked viands instead of preparing at home. Sometimes, I just open a can of corned beef/tuna or just steam hotdog (it's always present in our freezer, it's one of my favorites). Luckily, I found a new way of preparing a combination of squid balls (or chicken balls) and hotdog that will surely make us satisfied. What I love about this recipe is it only takes 15 minutes to prepare, and 15 minutes to cook. So here's the recipe:


Ingredients:

2 tbsp cooking oil
1 tsp minced garlic
1/4 cup chopped onions
25 pieces squid balls (or chicken balls), sliced into halves
10 pieces hotdog, sliced diagonally
1 cup cubed potatoes
1 cup cubed carrots
1 pc maggi chicken broth cube
1 cup water
1 tbsp maggi savor classic
1/4 cup diced green bell peppers
1/2 cup nestle cream


Procedure

  1. Heat oil and saute garlic and onion until limp. Add squid balls and hotdogs, stir fry for 2 minutes.

  2. Stir in potatoes, carrots and broth, simmer for another 5 minutes or until vegetables are fork tender.

  3. Add MAGGI Savor and green pepper, after 2 minutes pour in cream, simmer for another 3 minutes but do not boil. Serve hot.
